ZEPPOLE FOR ST. JOSEPH AND ST. PATRICK'S COOKIE

 Okay I do not celebrate the day.

But Adolph introduced me to Zeppole and the rest is history.



And of course it comes close to St. Patrick's Day so I could celebrate both.

GRANPA WAS A GIRL DAD AND WOULD HONOUR INTERNATIONAL WOMEN'S DAY

 Granpa loved to cook.

But he also loved the women in his life- his nonna Maria, his mom, his daughters, his granddaughters and me- his wife.

He respected the contributions all of us made to him.

He would argue politics with us too.

We always agreed to disagree.

So making food for his family was his way to be soulful.

MARCH A GOOD TIME FOR CLEANING OUT THE FREEZER-PORK IN THE SAUCE

 Using up food resources helps with overall environmental support.

We are told so much food waster goes to the dump.

So having saved a huge chunk of pork roast in the freezer, I chopped it up to add to my homemade meat sauce today for flavour!

It is simmering away in the slow cooker so the aroma in the house will bring some much needed assault on my senses. Smelling food helps me to calm and work more efficiently.

Some will be used in my dinner of ravioli bought  from Longos, but mostly for my working daughter and smaller portions to be put in the freezer for one person pasta meals.

Cooking for one is hard but when I know I will be sharing with family it makes it doable.


I do miss granpa's cooking. His sauce was always the best.

Sauces.

Roast with egg.

OH JANUARY AND HOW I MISS GRANPA'S SOUPS

 I heard on the radio today asking people what is their comfort food.

Soup was the leader.

So it reminded me how much I miss my husband's homemade soups.

Adolph loved to make soup especially in the cold weather.

Little meat balls cooked in the oven to cut down on the fat

More soup.



He loved them all. His mother's favourite recipe of Minestra Soup.



Veggie Soup.


Tomato sauce.

I loved the aroma in the house from his soups.

GRANPA MADE TASTY CHRISTMAS EVE SEAFOOD DISHES



 Granpa loved to cook Christmas Eve dinner. He learned from his mother Concetta. 

One tradition that Adolph kept in the family after his mother passed away was the Christmas Eve Seafood dinner meal.

When one daughter could not attend on Christmas Eve, we would have it the weekend before Christmas.

Eventually both daughters could not attend so Adolph would make a shorten version for the two of us.

Remembering the good food he made I thought I would repost some of his favourite dishes.


CHRISTMAS SEAFOOD APPETIZER OR AS ADOLPH WOULD CALL IT SEAFOOD SALAD



A variety of precooked seafood like shrimps, calamari, scallops make for a tasty dish. Or a bag of seafood medley mix. You can add any seafood you prefer.

A large piece of celery.

Chop up into small celery pieces.

Two buds of garlic finely chopped.

One or Two tablespoons of olive oil

 Add freshly squeezed lemon juice or use bottled lemon juice. As much as desired.

Salt and pepper to taste. Let it marinade for several hours in the fridge for the pieces to absorb the lemon taste as well as the other ingredients.

Great as a first course to the 7 fishes of Christmas Eve.
