MY EGG ROUND ROAST

The other night I wanted to use the round roast I had in the freezer. I decided to make it the way my mother would make it.
Boil an egg, peel it, wash it off then put it in the middle of the roast. Cook the roast either in the oven or on the stove in a covered pan.

Slice it so there is a piece of egg in each slice.


Add some gravy and side dishes of your choice. I used some leftover sauce making a few noodles.  Rapini with olive oil and garlic, and sliced anise with red vinegar made the additional side dishes. Salt and pepper to taste. Not bad for a week night meal!
